El pa que us porto avui<!--more--> el vaig fer abans que comenc\u00e9s la calorada forta, per\u00f2 no havia trobat el moment d&#8217;enllestir l&#8217;entrada. La combinaci\u00f3 del blat amb l&#8217;espelta trobo que \u00e9s molt encertada i el poolish li acaba de donar una gran suavitat i esponjositat a la molla, combinat amb l&#8217;alta hidrataci\u00f3 de la massa (70%). \u00c9s un pa molt recomanable i si en voleu potenciar encara m\u00e9s el sabor, poseu\u00a0 un bon grapat de llavors de girasol, carabassa, lli, s\u00e8sam, rosella -pr\u00e8viament torrades- a la massa i tamb\u00e9 per sobre del pa. Ser\u00e0 inoblidable!<\/p>\n<p style=\"text-align: justify\">NOTA: pel que fa als temps de fermentaci\u00f3, tingueu en compte que som a l&#8217;estiu i a la meva cuina hi havia uns 26-27 graus. Per aquest motiu he fet servir menys llevat de l&#8217;habitual. Si feu aquest pa a la tardor o l&#8217;hivern els temps de fermentaci\u00f3 seran una mica m\u00e9s llargs i podeu augmentar el llevat de la massa (no el del poolish) a uns 2g de sec o uns 6 de fresc. Recordeu, per\u00f2, que a menys llevat i m\u00e9s temps de fermentaci\u00f3, millor pa.<\/p>\n<hr \/>\n<h3><span style=\"color: #b657c9\">Ingredients:<\/span><\/h3>\n<hr \/>\n<p><strong>Poolish<\/strong><\/p>\n<ul>\n<li>100g de farina panificable<\/li>\n<li>100g d&#8217;aigua<\/li>\n<li>0&#8217;8g de llevat sec o 2&#8217;4g de fresc<\/li>\n<\/ul>\n<p><strong>Pa<\/strong><\/p>\n<ul>\n<li>Tot el poolish<\/li>\n<li>170g de farina de blat panificable<\/li>\n<li>240g de farina de blat integral<\/li>\n<li>90g de farina d&#8217;espelta integral<\/li>\n<li>320g d&#8217;aigua<\/li>\n<li>9g de sal<\/li>\n<li>1 cullerada sopera de mel<\/li>\n<li>1&#8217;2g de llevat sec o 3&#8217;6g de fresc<\/li>\n<\/ul>\n<hr \/>\n<h3><span style=\"color: #b657c9\">Elaboraci\u00f3:<\/span><\/h3>\n<hr \/>\n<p><strong>Poolish<\/strong><\/p>\n<p style=\"padding-left: 30px;text-align: justify\">1. Deixeu-ho reposar de vuit a dotze hores a la nevera, tapat amb film transparent. Poseu tot el poolish i la resta d&#8217;ingredients en un bol, barregeu-ho b\u00e9 i amasseu.<\/p>\n<p style=\"padding-left: 30px\">2. Doneu forma de bola a la massa, poseu-la en un bol i tapeu-la amb un drap humit o film de pl\u00e0stic.<\/p>\n<p style=\"padding-left: 30px\">3. Deixeu-la fermentar\u00a0 aproximadament 1 hora i 15 minuts a temperatura ambient .<\/p>\n<p style=\"padding-left: 30px\">4. Traieu la massa del bol i aplaneu-la amb les dues mans per desgasar-la.<\/p>\n<p style=\"padding-left: 30px\">5. Preescalfeu el forn a 230\u00ba i poseu-hi a dins un recipient met\u00e0l\u00b7lic. Abaixeu la temperatura a 200 i coeu-lo uns 40-45 minuts. Si abans d&#8217;acabar la cocci\u00f3 el pa es torra massa de sobre, tapeu-lo amb paper de plata fins que s&#8217;acabi de coure.<\/p>\n<p style=\"text-align: justify;padding-left: 30px\">10.
